Sweet Onion Bread
We’ve partnered with Erin at State of Dinner (website | Instagram| Facebook) to create another savory side dish. Onion bread is a wonderful addition to any kind of meal, is great for sandwiches, soups, roasts, and leftover pieces can be made into tasty croutons, toast, or used for grilled cheese sandwiches.

Ingredients
- 2 ¼ teaspoons of active dry yeast (1/4 ounce package)
- ¼ cup warm water (100-110°F)
- 1 ¼ cup cottage cheese
- 1 tablespoon melted butter
- 1 egg
- 2 tablespoons granulated sugar
- ½ cup finely chopped sweet onion (about ½ medium onion)
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon baking soda
- 2 ¼ – 2 ¾ cups all-purpose flour
Instructions
- Pour the warm water into a small bowl and stir yeast to dissolve. Let sit for 5 minutes to proof. (Small bubbles will be on the surface of the liquid.)
- Meanwhile, use an immersion blender or food processor to cream the cottage cheese until it is smooth.
- Transfer the cottage cheese to a large mixing bowl. Add the butter and egg and mix on medium-low speed using a paddle attachment of an electric mixer.
- Add the yeast mixture, sugar, sweet onion, seasonings, and baking soda and mix until combined.
- Add 2 ¼ cups of flour and continue to mix until the flour is fully mixed in. It should be a stiff dough that is slightly tacky. If it is very sticky then stir in additional flour.
- Cover the bowl and place it in a warm, dry location. Allow to rise until double, about 1 hour.
- Spray a 9×5-inch loaf pan with nonstick spray.
- Once the dough has doubled in size, remove it from the bowl and shape into the shape of a loaf and rise until it has risen to about a half-inch from the top of the pan.
- Preheat the oven to 350°F. Bake for 30-40 minutes, or until the top of the bread is golden brown. Cool for 10 minutes in the loaf pan and then turn onto a cooling rack and cool completely.
