Summer Grain Bowl

SUMMER GRAIN BOWL

Servings: 4

Ingredients: 

  • 1 cup quinoa
  • ½ small Texas Sweet Onion, diced
  • 1 1/2 cups black beans
  • 1 cup cherry tomatoes, sliced
  • 1 ½ cups corn
  • 1 avocado, sliced
  • Plain Greek yogurt and olive oil for serving

Directions: 

  1. Cook the quinoa according to the instructions on the package.
  2. Layer each bowl with sweet onions, black beans, tomatoes, corn and avocado
  3. Season with salt and pepper to taste. Serve with a drizzle of olive oil and plain Greek yogurt
