MANGO CHICKEN TINGA
Tinga is a classic dish served throughout Mexico. It’s simply shredded meat in a red chili sauce of some kind. We’ve collaborated with Vianney from Sweet Life Bake (Instagram | website) to create this Mango Chicken Tinga dish. The sweet flavor of mango meets the smoky flavors of the chipotle to create a mouth-watering experience! If you don’t like spicy, use fewer chipotle peppers.

Ingredients
- 4 pounds boneless, skinless chicken thighs
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon ground oregano
- 1 Texas 1015 onion, sliced
- 2 chipotle peppers in adobo sauce
- 3 cloves garlic, minced
- 1 bay leaf
- 1 (14 ounce) can tomato sauce
- 2 cups mango juice
Directions
- Place chicken thighs in slow cooker, season with salt, pepper, and oregano.
- Top with onions, chipotle peppers, garlic, and bay leaf. Pour over tomato sauce and mango juice.
- Cover and cook on low setting for 5 hours, or until chicken thigs are fork tender.
- Remove chicken with a slotted spoon to a cutting broad, shred and serve warm.
