SHEET PAN CHICKEN FAJITAS
If you like fajitas, you might make them more if they weren’t so messy, right? This recipe from Erin at State of Dinner (website | Instagram) combines all your favorite fajita ingredients into one sheet pan. Minimal mess, one pan clean-up – can you ask for anything simpler? 😊

Ingredients
- 1 teaspoon kosher salt
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 pound boneless, skinless chicken breasts
- 2 bell peppers
- 1 TX1015 Sweet Onion
- 2 tablespoons olive oil
- 8 warm tortillas
- Optional: Lime wedges, chopped cilantro, sliced jalapenos
- Toppings can include: Salsa, shredded cheese, sour cream, guacamole
Instructions
- Preheat oven to 375°F.
- Mix the spices in a small bowl and set aside.
- Slice the chicken breasts into quarter-inch strips.
- Slice peppers, and sweet onion into thin strips.
- Spread the chicken and vegetables onto a large sheet pan and drizzle with olive oil. Then sprinkle the seasonings over the mixture and toss to coat.
- Place in the oven and cook for 20 minutes, or until the chicken reaches an internal temperature of 165°. If desired, broil the fajitas on high for 3 minutes to achieve some char.
- If using, squeeze lime juice over the fajitas and sprinkle with chopped cilantro and sliced jalapenos.
- Serve with warm tortillas and desired toppings.
