FLATBREAD WITH CARAMELIZED ONIONS, BACON AND ARUGULA
Savory flatbread with a sweet and crunchy twist!
Servings: 2-3
Ingredients:
- 1 tbsp butter
- ½ tbsp olive oil
- 1 large sweet onion, sliced
- ½ tsp balsamic vinegar
- 1 naan flatbread (rectangular shape)
- 1 cup cheddar cheese, shredded
- 1 cup fontina cheese, shredded
- 4 slices bacon
- Arugula, olive oil and lemon for serving
Directions:
- For the caramelized onions: Heat the butter and olive oil in a pan over medium/high heat. Add the onions into the pan and let them sit for about 5 minutes. Once they start to sweat, turn the heat down to low and cover the pan. Stir the onions every 10-15 minutes. Cook until they are a deep golden brown. When there’s about 10 minutes left, stir in the balsamic vinegar.
- To make prepare the flatbread: Preheat oven to 425F. Layer the cheese onto the flatbread, followed by the bacon, followed by the caramelized onions. Bake for 13-15 minutes or until the cheese is bubbly and the edges are golden brown
For extra flavor, toss the arugula with a little lemon juice and olive oil before placing it on the flatbread.
