Breakfast Potato & Onion Skillet

Ingredients

  • 2 medium Texas 1015 Sweet Onions, sliced
  • 4 medium russet or Yukon Gold potatoes, diced small
  • 2 tablespoons olive oil or butter
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 eggs
  • ½ cup shredded cheddar cheese (optional)
  • Chopped parsley or green onions for garnish
  • Hot sauce, optional

Directions

Heat olive oil or butter in a large skillet over medium heat.
Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until they begin to soften and crisp.
Stir in sliced Texas 1015 Sweet Onions. Cook another 8–10 minutes until onions are caramelized and potatoes are golden brown.
Season with smoked paprika, garlic powder, salt, and pepper.
Create 4 small wells in the skillet and crack an egg into each one. Cover with a lid and cook 3–5 minutes until eggs reach desired doneness.
Sprinkle with cheese if desired and let melt.
Garnish with parsley or green onions and serve hot with toast, tortillas, or fresh fruit

Stretch this meal even further by adding ham, sausage, black beans, or chopped bell peppers.
