GARLIC CHILI OIL NOODLES WITH CARAMELIZED ONIONS
Serves: 2
Ingredients
- 3 tbsp butter
- ½ tsp sugar
- 1 Medium Sweet Onion, thinly sliced
- 5 tbsp vegetable or sesame oil
- 2 (3 oz) ramen noodle packages
- 1 tbsp red chili flakes
- 2 garlic cloves, finely minced
- 1 ½ tbsp chopped green onion
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- ½ tsp sugar
- ½ tsp chicken bouillon powder
- 1 ½ tsp sesame seeds
Instructions
- Melt butter in a large pot over medium heat. Thinly slice onion and add to the large pot. Season with a ⅛ tsp salt and sugar.
- Reduce heat to medium low and cook until onions begin to caramelize. Stir frequently to prevent burning. This will take 15-20 minutes.
- While onions cook, prepare the ramen according to package instructions. Discard the seasoning packets.
- Prepare the topping while the ramen cooks. Remove noodles from water and drain. Place the noodles into a serving bowl and top with chili flakes, onion, garlic, soy sauce, and vinegar.
- Place the oil in a small pan and heat until sizzling. Pour the oil over the garlic and chili flakes sitting on top of the noodles. Toss to evenly coat.
- Serve in bowls, top with caramelized onions and sesame seeds.
