MUFFIN PAN ROASTED ONIONS

Serves: 6 

Prep Time: 5 Minutes 

Cook Time: 40 minutes 

 Ingredients 

  • 3 medium onions— 4 inches in diameter, halved through the center  
  • 1/2 tsp salt 
  • 2 ground black pepper 
  • 2 tablespoons unsalted butter, melted 

 Instructions 

  1.  Preheat the oven to 400°F 
  2.  Place the onion halves cut-side up in the cups of a 6-cup muffin tin. Sprinkle the onions with salt and pepper. 
  3.  Roast for 20 minutes or until the onions have slightly softened. Brush with the butter and return to the oven. Bake for an additional 20 minutes. The onions will be very soft and browned.
