ONE POT FRENCH ONION PASTA

Ingredients
- 3 tbsp butter
- ½ tsp sugar
- 1 Large Sweet Onion, thinly sliced
- 1/8 cup Sherry
- 1 tsp dried thyme
- Salt and Pepper to taste
- 16 oz Rigatoni, uncooked
- 4 cups Beef Broth
- ½ cup water
- 1 tsp Worcestershire Sauce
- 2/3 cup Parmesan Cheese freshly grated, more to serve
- ½ cup Heavy Cream
- 2 tbsp freshly chopped parsley
Instructions
- Melt butter in a large pot over medium heat. Thinly slice onion and add to the large pot. Season with a ⅛ tsp salt and sugar.
- Reduce heat to medium low and cook until onions begin to caramelize. Stir frequently to prevent burning. This will take 15-20 minutes.
- Pour in sherry into the pot with the onions. Deglaze by scraping up the brown bits at the bottom of the pan. Add dried thyme.
- Add uncooked rigatoni, beef broth, water, and Worcestershire Sauce. Stir. Bring to a simmer and cook for 10 minutes.
- Reduce heat to low and add the heavy cream and cheese. Allow cheese to melt and sauce to thicken for about 5-7 minutes
- Garnish with fresh parsley and additional cheese.
