APPLE WEDGE SALAD WITH CARAMELIZED ONION DRESSING

Ingredients
- 3 tbsp butter
- ⅛ tsp sugar
- ½ tsp salt
- 2 medium sweet onions, sliced thin
- 3/4 cup light olive oil
- 1/8 cup apple cider vinegar
- 1/8 cup honey
- 1 ½ tablespoon Dijon mustard
- 1/2 teaspoon pepper
- 1 head iceberg lettuce
- 4 strips of bacon, cooked and chopped
- 1 medium apple, sliced thin
- ¼ cup blue cheese crumbles
Instructions
For Onions:
Melt butter in a large pot over medium heat. Thinly slice onion and add to the large pot. Season with salt and sugar.
Reduce heat to medium low and cook until onions begin to caramelize. Stir frequently to prevent burning. This will take 15-20 minutes
For Dressing:
Add ⅔ of the onions to a blender. Add olive oil, vinegar, honey, mustard, and pepper. Blend till smooth. Set aside.
For Salad Assembly:
Prepare the lettuce by cutting it in half and then cutting it in half again to create 4 wedges. Remove the stem by trimming the end. Plate the salad and add dressing, additional carmelized onions, apple slices, blue cheese, and bacon.
