Chicken Street Tacos

Prep Time: 10 Minutes (+1 hour for marinating time)

Ingredients
- 1 ½ lbs. trimmed chicken thighs (chicken breasts will also work for this recipe)
- ¼ cup fresh lime juice
- ⅓ cup olive oil
- 1 tsp garlic powder
- ½ tsp ground cumin
- 1 tsp ancho chili powder
- ½ tsp salt
- ½ tsp black pepper
- 1 onion, diced
- 1 bunch fresh cilantro diced
- Additional sliced limes
- Corn or flour tortillas, warmed
Instructions
Place chicken in a sealable plastic bag. Add lime juice, olive oil, garlic powder, cumin, chili powder, salt, and pepper. Place in the fridge for an hour.
Preheat the grill to medium-high heat. Remove from bag and discard marinade. Place chicken on the grill and cook for 5-6 minutes per side. Remove chicken from the grill and allow it to rest for about 5 minutes.
While the chicken cools, mix the cilantro, onion, and squeeze of lime in a medium bowl.
Chop the chicken into small pieces. Place chicken into tortillas. Top with onions and cilantro. Serve warm.
