15 Minute Thai Peanut Noodles

Ingredients
- 8 oz dried rice noodles
- ½ onion, sliced thin
- ½ cup smooth peanut butter
- 1 ½ tbsp soy sauce
- 1 tsp sriracha sauce
- ½ tbsp rice vinegar
- 1 ½ tbsp sesame or vegetable oil
- 1 tsp honey
- ½ tsp ground ginger
- 2 tbsp chopped fresh cilantro, for garnish
- 2 tbsp peanuts, for garnish
- Sesame seeds, for garnish
Instructions
Cook noodles according to package directions. Set aside when cooking and draining is complete.
While noodles cook, begin the sauce. In a rimmed skillet, sauté onions in a ½ tbsp of oil. While onions cook, whisk together peanut butter, soy sauce, sriracha, vinegar, remaining oil, honey, and ginger.
Once onions are tender, add peanut sauce and stir. Toss the cooked noodles in the sauce.
Plate and garnish with fresh cilantro, peanuts, and sesame seeds.
