Black Bean Salsa

BLACK BEAN SALSA WITH TX1015 SWEET ONIONS

Black Bean Salsa is the perfect place to flex your culinary prowess. It can be made with as many different spices as you prefer, and we’ve partnered with Vianney from Sweet Life Bake (website | Instagram) to create this warm and elegant Black Bean Salsa with TX1015 Sweet Onions.  The recipe starts with sautéing corn kernels until crispy, adding TX1015 Sweet Onions, and jalapeños. Finish with lime juice and cilantro.  Enjoy!

Servings: 6

Ingredients: 

  • 1 tablespoon oil
  • 1 (15 ounce) whole kernel corn, drained
  • 1 medium Texas 1015 onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 1 clove garlic, minced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/4 cup lime juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/3 cup cilantro, chopped

Directions: 

  1. In a large nonstick skillet over medium-high heat oil.
  2. Add corn, and sauté until corn starts to crisp, stirring occasionally, for about 5 minutes.
  3. Add diced onion, jalapeno and garlic cook an additional 3 minutes, stirring occasionally.
  4. Remove from heat, stir in remaining ingredients, season to taste, and serve warm with tortilla chips.
