Cajun Onion Boil

Ingredients

  • 1 large onion, peeled and ends trimmed off
  • 1 tbsp salted butter
  • 1 ½ tbsp olive oil
  • 1 tsp cajun seasoning
  • ½ tsp salt
  • ¼ tsp Old Bay seasoning

Instructions

Preheat the oven to 375°F. 

Using a knife or a small melon baller, remove the core of the onion. There should be space for about ⅓ on the center of the onion. 

Place the onion on a piece of foil that is large enough to wrap it completely. Place the butter into the onion well. 

In a small bowl, mix together the oil, Cajun seasoning, salt, and Old Bay. Pour the oil mixture into the well and all around the onion so it is completely coated. 

Wrap onion tightly with foil and place it in a baking dish. 

Bake for 60 minutes. The onion should be very soft and tender. If it needs more time, simply reseal the foil and bake for an additional 5-10 minutes. 

Remove from the oven and enjoy while hot.
