Creamy Caramelized Onion Pesto Dressing

Ingredients
- 1 tbsp butter
- ⅛ tsp sugar
- ½ Large Sweet Onion, thinly sliced
- ¼ cup basil pesto
- 2 tbsp sour cream
- 2 tbsp mayonnaise
- 2 tbsp buttermilk
- 1 ½ tbsp white wine vinegar
Instructions
For Onions:
Melt butter in a large pot over medium heat. Thinly slice onion and add to the large pot. Season with salt and sugar.
Reduce heat to medium low and cook until onions begin to caramelize. Stir frequently to prevent burning. This will take 15-20 minutes. Remove from heat and allow to cool on a plate.
For Dressing:
Finely chop the onions till they almost resemble a paste.
In a jar with a lid, add the onion, pesto, sour cream, mayonnaise, buttermilk, and vinegar.
Shake the jar to emulsify. For a thicker dressing you may add more mayo or sour cream. For a thinner dressing, more pesto or vinegar can be added.
Store in a closed container in the fridge for up to 5 days.
