Flatbread w/ Caramelized Onions, Bacon, and Arugula

FLATBREAD WITH CARAMELIZED ONIONS, BACON AND ARUGULA​

Savory flatbread with a sweet and crunchy twist!

Servings: 2-3

Ingredients:

  • 1 tbsp butter
  • ½ tbsp olive oil
  • 1 large sweet onion, sliced
  • ½ tsp balsamic vinegar
  • 1 naan flatbread (rectangular shape)
  • 1 cup cheddar cheese, shredded
  • 1 cup fontina cheese, shredded
  • 4 slices bacon
  • Arugula, olive oil and lemon for serving

Directions:

  1. For the caramelized onions: Heat the butter and olive oil in a pan over medium/high heat. Add the onions into the pan and let them sit for about 5 minutes. Once they start to sweat, turn the heat down to low and cover the pan. Stir the onions every 10-15 minutes. Cook until they are a deep golden brown. When there’s about 10 minutes left, stir in the balsamic vinegar.
  2. To make prepare the flatbread: Preheat oven to 425F. Layer the cheese onto the flatbread, followed by the bacon, followed by the caramelized onions. Bake for 13-15 minutes or until the cheese is bubbly and the edges are golden brown

For extra flavor, toss the arugula with a little lemon juice and olive oil before placing it on the flatbread.
