GRILLED SIRLOIN, ONION AND SWEET POTATO KEBABS
Serves: 4 to 6
Ingredients
- 1 ½ to 2 lbs sirloin steak, cut into 1-inch cubes
- 1 to 2 sweet potatoes, peeled and cut into 1/4-inch thick slices
- 1 to 2 onions, cut into 1 x 1 ½-inch pieces
- Garlic cloves, peeled
- Extra-virgin olive oil
- Kosher salt, to taste
- Black pepper, to taste
- Skewers
For the Spicy Garlic Yogurt Sauce:
- 1 cup plain yogurt
- 2 garlic cloves, rough chopped
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1 tablespoon olive oil
- Juice of 1 lemon
Directions
- 1 hour before grilling, soak the skewers in water (if using wooden skewers).
- Heat the grill to 350-400 degrees.
- On a skewer, alternate the pieces of meat, sweet potato, onions, and garlic. Up to 4 pieces of meat per skewer. Be sure to leave a little room between each ingredient to help them cook evenly. Coat each skewer with 1/2 teaspoon of oil and salt and pepper to taste.
- Grill 6-7 minutes per side. Serve warm with Spicey Garlic Yogurt Sauce.
- For the Spicy Garlic Yogurt Sauce
- In a small bowl combine the yogurt, garlic, red pepper flakes, salt olive oil and lemon. Stir to combine. Taste and adjust seasonings. Store in an airtight container in the fridge until ready to serve. This recipe is easily doubled.
