MANGO CHICKEN TINGA

Tinga is a classic dish served throughout Mexico. It’s simply shredded meat in a red chili sauce of some kind. We’ve collaborated with Vianney from Sweet Life Bake (Instagram | website) to create this Mango Chicken Tinga dish. The sweet flavor of mango meets the smoky flavors of the chipotle to create a mouth-watering experience! If you don’t like spicy, use fewer chipotle peppers.

Ingredients

  • 4 pounds boneless, skinless chicken thighs
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon ground oregano
  • 1 Texas 1015 onion, sliced
  • 2 chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 (14 ounce) can tomato sauce
  • 2 cups mango juice

Directions

  1. Place chicken thighs in slow cooker, season with salt, pepper, and oregano.
  2. Top with onions, chipotle peppers, garlic, and bay leaf. Pour over tomato sauce and mango juice.
  3. Cover and cook on low setting for 5 hours, or until chicken thigs are fork tender.
  4. Remove chicken with a slotted spoon to a cutting broad, shred and serve warm.
