Mexican Street Corn Coleslaw

Ingredients
- 4 ½ cups coleslaw mix (or 3 ½ cup green cabbage and 1 cup purple cabbage)
- 1 cup corn (corn can be frozen or canned)
- 1 tbsp diced jarred jalapeno
- ½ onion, finely diced
- ½ cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp fresh lime juice
- 2 tbsp chopped fresh cilantro
- ⅓ cup cotija or feta cheese (+ 2 tbsp for topping)
- 2 tsp Tajin seasoning (or your favorite chili lime salt seasoning)
- ¼ tsp black pepper
Instructions
In a medium bowl, mix together mayo, sour cream, lime juice, 1 tbsp cilantro, 1 tsp of Tajin, and black pepper.
Place coleslaw mix in a large bowl. Add jalapenos, onion, ⅓ cup of cheese. Stir. Next, add the dressing. Mix well to evenly coat.
Top with remaining cheese, cilantro, and Tajin. Serve chilled.
