Mexican Street Corn Coleslaw

Ingredients

  • 4 ½ cups coleslaw mix (or 3 ½ cup green cabbage and 1 cup purple cabbage)
  • 1 cup corn (corn can be frozen or canned)
  • 1 tbsp diced jarred jalapeno
  • ½ onion, finely diced
  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • ⅓ cup cotija or feta cheese (+ 2 tbsp for topping)
  • 2 tsp Tajin seasoning (or your favorite chili lime salt seasoning)
  • ¼ tsp black pepper

Instructions

In a medium bowl, mix together mayo, sour cream, lime juice, 1 tbsp cilantro, 1 tsp of Tajin, and black pepper. 

Place coleslaw mix in a large bowl. Add jalapenos, onion, ⅓ cup of cheese. Stir. Next, add the dressing. Mix well to evenly coat. 

Top with remaining cheese, cilantro, and Tajin. Serve chilled.
