ONE POT FRENCH ONION PASTA

Serves: 6 

Prep Time: 10 Minutes 

Cook Time: 40 Minutes 

 Ingredients 

  •  3 tbsp butter 
  • ½ tsp sugar 
  • 1 Large Sweet Onion, thinly sliced  
  • 1/8 cup Sherry 
  • 1 tsp dried thyme 
  • Salt and Pepper to taste 
  • 16 oz Rigatoni, uncooked 
  • 4 cups Beef Broth 
  • ½ cup water 
  • 1 tsp Worcestershire Sauce 
  • 2/3 cup Parmesan Cheese freshly grated, more to serve 
  • ½  cup Heavy Cream 
  • 2 tbsp freshly chopped parsley 

 Instructions 

  1.  Melt butter in a large pot over medium heat. Thinly slice onion and add to the large pot. Season with a ⅛ tsp salt and sugar. 
  2.  Reduce heat to medium low and cook until onions begin to caramelize. Stir frequently to prevent burning. This will take 15-20 minutes.  
  3.  Pour in sherry into the pot with the onions. Deglaze by scraping up the brown bits at the bottom of the pan. Add dried thyme. 
  4.  Add uncooked rigatoni, beef broth, water, and Worcestershire Sauce. Stir. Bring to a simmer and cook for 10 minutes. 
  5.  Reduce heat to low and add the heavy cream and cheese. Allow cheese to melt and sauce to thicken for about 5-7 minutes 
  6.  Garnish with fresh parsley and additional cheese.
