Oven Summer Squash Onions

OVEN SUMMER SQUASH & ONIONS

 

Serves 4

Ingredients:

  • 2 zucchinis, diced
  • 2 squash, diced
  • 1 Texas 1015 onion, diced
  • 1 red bell pepper, diced
  • 2 tablespoon extra-virgin olive oil
  • 1/2 teaspoon pink Himalayan salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • fresh parsley (optional garnish)

Directions:

  1. Preheat oven to 425 degrees
  2. Spray a baking sheet with non-stick spray
  3. Place chopped vegetables evenly on baking sheet
  4. Drizzle with olive oil and sprinkle with salt, garlic powder, and black pepper
  5. Cook for 20-25 minutes stirring after 15 minutes to help them roast evenly
  6. Remove from heat, garnish with parsley, serve, and enjoy!
