SALSA VERDE SHRIMP

Salsa Verde (green salsa) is traditionally made with green peppers, but instead of tomatoes, you would use tomatillos.  Vianney from Sweet Life Bake (Instagram | website) is back with another recipe – Salsa Verde Shrimp! You can use TX1015 Sweet Onions to create the Salsa Verde, and they can also be used to sauté with the shrimp. Serve over your favorite rice (we recommend cilantro lime rice!)

Ingredients:

  • 2 pounds shrimp, peeled and deveined
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 Texas 1015 onion, finely diced
  • 2 cups salsa verde
  • steamed rice
  • 1 cup cilantro, chopped

Directions

  • Season shrimp with salt, pepper, and garlic powder, stir to combine.
  • In a skillet heat oil over medium-high heat, add diced onion, sauté until light and translucent, about 3 minutes.
  • Add shrimp sauté 2 minutes per side.
  • Add salsa verde, stir and cook an additional 3 minutes.
  • Stir in cilantro and serve over steamed rice.
