SHEET PAN CHICKEN FAJITAS

If you like fajitas, you might make them more if they weren’t so messy, right? This recipe from Erin at State of Dinner (website Instagram) combines all your favorite fajita ingredients into one sheet pan. Minimal mess, one pan clean-up – can you ask for anything simpler? 😊

Serves: 4

Ingredients

  • 1 teaspoon kosher salt
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 pound boneless, skinless chicken breasts
  • 2 bell peppers
  • 1 TX1015 Sweet Onion
  • 2 tablespoons olive oil
  • 8 warm tortillas
  • Optional: Lime wedges, chopped cilantro, sliced jalapenos
  • Toppings can include: Salsa, shredded cheese, sour cream, guacamole

Instructions

  1. Preheat oven to 375°F.
  2. Mix the spices in a small bowl and set aside.
  3. Slice the chicken breasts into quarter-inch strips.
  4. Slice peppers, and sweet onion into thin strips.
  5. Spread the chicken and vegetables onto a large sheet pan and drizzle with olive oil. Then sprinkle the seasonings over the mixture and toss to coat.
  6. Place in the oven and cook for 20 minutes, or until the chicken reaches an internal temperature of 165°. If desired, broil the fajitas on high for 3 minutes to achieve some char.
  7. If using, squeeze lime juice over the fajitas and sprinkle with chopped cilantro and sliced jalapenos.
  8. Serve with warm tortillas and desired toppings.
