SLOW COOKER GUAJILLO CHICKEN
Ingredients:
- 2 pounds of boneless, skinless chicken breasts
1 large onion, thinly sliced
2 garlic cloves, minced
2 dried guajillo chiles, stems and seeds removed
1 teaspoon ground cumin - 2 teaspoons salt
- 1 teaspoon pepper
- 1 (15oz.) can diced tomatoes, with their juice
- 2 cups of chicken broth
Directions:
- Place the chicken in the bottom of a 4-6 qt slow cooker.
- Scatter on the onions, garlic, dried chiles and cumin.
- Pour the tomatoes and broth over all and cover.
- Cook on high for 4-5 hours or low for 7-8 hrs.
- Remove from the slow cooker, shred, and use to make tacos.
