SUMMER AVOCADO TOAST WITH CORN SALSA
We’ve partnered with Jenna at The Urben Life (website | Instagram | Facebook) to create a new twist on avocado toast. This summer avocado toast with corn salsa comes together with creamy avocado, juicy tomatoes, fresh corn, and TX1015 Sweet Onions!
Servings: 4
Ingredients:
- 1 small corn on the cob
- 1/2 small sweet onion
- 1/2 small jalapeño
- 1 small tomato
- 1 large avocado
- Salt and pepper, to taste
- Lime juice and cilantro, to top
- 4 slices of toasted bread
Directions:
- Remove the husk from the corn and cook until slightly charred. Let cool then carefully cut the kernels off.
- Dice the TX1015 Sweet Onion and jalapeño then add to a skillet with a bit of oil and cook over medium heat until the TX1015 Sweet Onion is translucent. Stir in the corn, season with salt and pepper, then remove from heat.
- Slice the tomato and sit et aside. Cut the avocado in half, remove the pit, and smash in a medium-sized mixing bowl.
- To assemble, spread the avocado mash on toast, and top with a slice of tomato and a spoonful of corn salsa. Squeeze on lime juice and sprinkle with cilantro.
