ZUCCHINI AND CORN SAUTÉ

Serves 6

Ingredients:

  • 4 tablespoons olive oil
  • 1 TX1015 Sweet Onion, diced
  • 1 cup corn kernels, canned
  • 4 medium zucchinis, diced
  • 3 cloves garlic, minced
  • 1 teaspoon oregano
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 4 tablespoons lime juice
  • Fresh cilantro for serving

Directions:

  • Heat olive oil in a skillet over medium high heat.
  • Add onion and corn, sauté until onion is light and translucent.
  • Add zucchini, continue sautéing for an additional 3 minutes.
  • Add garlic, and cook, stirring frequently, about 1 minute.
  • Season with oregano, salt, and pepper. Remove from heat, stir in lime juice.
  • Serve warm, garnished with cilantro.
