SUMMER GRAIN BOWL

Ingredients:
- 1 cup quinoa
- ½ small Texas Sweet Onion, diced
- 1 1/2 cups black beans
- 1 cup cherry tomatoes, sliced
- 1 ½ cups corn
- 1 avocado, sliced
- Plain Greek yogurt and olive oil for serving
Directions:
- Cook the quinoa according to the instructions on the package.
- Layer each bowl with sweet onions, black beans, tomatoes, corn and avocado
- Season with salt and pepper to taste. Serve with a drizzle of olive oil and plain Greek yogurt
