A quick pickling of onions, radishes and carrots seasoned with coriander makes for a crunchy layer in my brisket bahn mi. Thick slices of brisket, sriracha-mayo and plenty of pickled jalapeños create one tasty bite.
DID YOU KNOW: Texas 1015 sweet onions are high in water content and sugar and low in sulfur compounds, Sulfur is what makes onions hot and your eyes water.
- In a large canning jar or plastic container with lid place onions, carrots and radishes, rice vinegar, water, ground coriander, pepper, salt, and pepper.
- Cover and shake to dissolve sugar. Allow to sit for at least an hour.
- When ready to assemble mix sriracha and mayo.
- Spread sriracha-mayo on one side of bread, add sliced brisket, top with pickled vegetables, cilantro, and pickled jalapenos.
