Mushroom Chipotle Beef

Ingredients

2 tablespoons olive oil 

1 pound beef sirloin, cut into 1 inch cubes 

1 TX1015 Onion, sliced 

4 garlic cloves, minced 

2 teaspoons salt 

1 teaspoon pepper 

1/2 cup beef broth  

2 tablespoons Worcestershire sauce 

2 cans (14.5 ounce) diced tomatoes, drained 

12 ounce mushrooms, stemmed and sliced 1/4 thick 

2 chipotle Chile peppers in adobo sauce chopped 

2 teaspoons salt 

1 teaspoon pepper 

1/3 cup chopped cilantro 

Directions

  1. Heat oil in a Dutch oven over high heat. When hot add beef in batches to not overcrowd the Dutch oven, and brown, adding in more oil if needed. Remove beef to a plate. 
  1. Reduce heat to medium high heat. add onion. cook, stirring occasionally, until light golden brown, about 5 minutes. add garlic and stir an additional 1 minute. Season with salt and pepper.  
  1. Return beef to Dutch oven. Add broth, Worcestershire, tomatoes, mushrooms, and chipotles.    
  1. Bring to a boil, then reduce heat to medium-low and bring to a simmer. Cover and simmer, stirring occasionally, until beef is tender, 20-25 minutes.  
  1. Serve warm, sprinkled with cilantro.
