- Heat oil in a Dutch oven over high heat. When hot add beef in batches to not overcrowd the Dutch oven, and brown, adding in more oil if needed. Remove beef to a plate.
- Reduce heat to medium high heat. add onion. cook, stirring occasionally, until light golden brown, about 5 minutes. add garlic and stir an additional 1 minute. Season with salt and pepper.
- Return beef to Dutch oven. Add broth, Worcestershire, tomatoes, mushrooms, and chipotles.
- Bring to a boil, then reduce heat to medium-low and bring to a simmer. Cover and simmer, stirring occasionally, until beef is tender, 20-25 minutes.
- Serve warm, sprinkled with cilantro.
