- Preheat oven to 425 degrees
- Spray a baking sheet with non-stick spray
- Place chopped vegetables evenly on baking sheet
- Drizzle with olive oil and sprinkle with salt, garlic powder, and black pepper
- Cook for 20-25 minutes stirring after 15 minutes to help them roast evenly
- Remove from heat, garnish with parsley, serve, and enjoy!
