- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Cut the puff pastry into 9 equal pieces. Set aside. On the parchment paper, divide the honey into 9 equally spaced drops on the baking sheet.
- Follow honey with a sprinkle of fresh thyme. Next place onion slices on top of the honey. Evenly divide the shredded swiss between the onions. Top with a puff pastry square.
- Brush each square with egg wash and bake for 18 minutes.
- Remove from oven, gently flip, and add additional honey and/or fresh thyme, if desired.
