- Heat olive oil in a skillet over medium high heat.
- Add onion and corn, sauté until onion is light and translucent.
- Add zucchini, continue sautéing for an additional 3 minutes.
- Add garlic, and cook, stirring frequently, about 1 minute.
- Season with oregano, salt, and pepper. Remove from heat, stir in lime juice.
- Serve warm, garnished with cilantro.
